A Festive Treat: Homemade Clementine Marshmallows

To celebrate Day 9 of our Advent Calendar (yes, yes, already!), we just had to talk about Marshmallow + Clementine, this fragrance that comes back every year to warm our hearts and fill our homes with holiday cheer. And what’s the holiday season without… desserts? Let’s face it, in December, we treat ourselves a little more than usual – and we totally deserve it!

Today, we’re bringing you a sweet and comforting recipe: homemade marshmallows infused with clementine. Yes, we all know store-bought marshmallows, but if you’ve never tasted a homemade marshmallow, you’re missing out! It’s a thousand times better, and guess what – it’s so easy to make.

So, put on your apron, light your Marshmallow + Clementine candle to set the mood, and get ready to create these sweet treats that will make everyone around you smile!

 

 

Recipe: Homemade Clementine Marshmallows

 

Ingredients

  • 2 packets of unflavored gelatin (15 ml or 1 tbsp each)
  • ½ cup (125 ml) freshly squeezed clementine juice
  • 1 cup (250 ml) sugar
  • ⅓ cup (80 ml) light corn syrup
  • Zest of 2 clementines, finely grated
  • ½ cup (125 ml) cold water
  • A pinch of salt
  • 1 cup (250 ml) powdered sugar, sifted
  • 2 tbsp (30 ml) cornstarch, sifted


Preparation

1. Prepare the mold: Line a 20 cm (8-inch) square mold with plastic wrap and lightly grease it. In a bowl, mix the powdered sugar and cornstarch. Set aside.


2. Make the marshmallow base:

  • In a saucepan, sprinkle the gelatin over the clementine juice. Let it bloom for 5 minutes.
  • Add the sugar, corn syrup, and salt. Bring to a simmer over medium heat, stirring gently until everything dissolves. Remove from heat and let it cool for 5 minutes.

3. Whip the mixture:

  • In a large bowl, pour the slightly cooled mixture and whisk on high speed using an electric mixer. Whisk for 10 to 12 minutes, or until the mixture triples in volume and forms firm peaks.
  • Add the clementine zest and gently fold it in.
4. Pour and refrigerate: Pour the mixture into the prepared mold, spreading it evenly. Lightly dust with the powdered sugar and cornstarch mixture. Refrigerate for at least 3 hours, or until the marshmallows are firm.

5. Cut and coat:

  • Turn the marshmallow slab onto a surface dusted with the sugar and cornstarch mix. Cut into cubes of your desired size using a lightly greased knife.
  • Coat each cube in the sugar-cornstarch mixture, shaking off any excess.

These marshmallows are perfect for:

  • Floating in a rich hot chocolate.
  • Pairing with a cup of spiced tea.
  • Decorating a holiday dessert, like a Yule log or cake.
  • Or simply enjoying one (or three) while watching a Christmas movie!
