Homemade Salted Caramel Oatmeal Cookies

Servings: About 20 cookies

Ingredients
  • ½ cup (120 g) softened butter or margarine
  • 1/3 cup (70 g) sugar
  • ½ cup (100 g) lightly packed brown sugar
  • 1 large egg
  • 1 tsp (5 ml) vanilla extract
  • 1 pinch of salt
  • 1 tsp (5 ml) baking soda
  • 1 cup (130 g) all-purpose flour
  • 1 ½ cups (120 g) quick-cooking oats
  • 2 tbsp (30 ml) milk or cream
  • ½ cup (80 g) caramel chunks or caramel chips
  • A pinch of sea salt (optional, for garnish)
Directions
  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla, mixing until well combined.
  4. Gradually stir in the flour, salt, and baking soda. Mix gently.
  5. Fold in the oats. If the dough feels too dry, add milk or cream.
  6. Gently mix in the caramel chunks or chips.
  7. Scoop spoonfuls of dough (about 1 tbsp each) onto the prepared baking sheet, spacing them out.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. For a gourmet touch, sprinkle the cookies with sea salt right after removing them from the oven. Let cool before indulging.
