• ½ cup (120 g) softened butter
  

• ½ cup (100 g) brown sugar
  

• 1 large egg
  

• 1 tsp (5 ml) vanilla extract
  

• ¾ cup (90 g) chestnut flour
  

• ¾ cup (90 g) all-purpose flour
  

• 1 tsp (5 ml) ground cinnamon
  

• ½ tsp (2.5 ml) nutmeg (optional)
  

• 1 pinch of salt
  

• 1 tsp (5 ml) baking powder
  

• 2 tbsp (30 ml) milk or plant-based drink

Instructions

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
   

2. In a large bowl, beat the butter and brown sugar until smooth and creamy.
   

3. Add the egg and vanilla, and mix until fully combined.
   

4. In another bowl, whisk together the flours, cinnamon, nutmeg, salt, and baking powder.
   

5. Gradually add the dry ingredients to the wet ingredients. Add the milk and mix until a soft dough forms.
   

6. Roll small dough balls (about 1 tbsp each) and place them on the baking sheet.
   

7. Gently flatten each one with the back of a spoon.
   

8. Bake for 12–14 minutes, until the edges are lightly golden and your kitchen smells like winter magic.
